Our Sicilian whole wheat spaghetti,is made from organic durum wheat and processed from wheat grain to pasta within 24 hours. Wheat milling and pasta production take place on one line, a unique process. Where previously spaghetti was dried on wooden racks in the village, it is now done in the factory itself. It is still done very slowly at a low temperature of 50 °C to 65 °C so that taste, aroma and nutrients are preserved.
